EFSA has published draft guidelines to help applicants when they prepare submissions for the safety evaluation of food enzymes (as required under Regulation No. 1331/2008). Initially, EFSA will evaluate food enzymes currently on the market (to establish an EU list of authorised substances), before assessing new enzymes.
