A draft guidance document updating and consolidating the principles and methods for the risk assessment of chemicals in food has been placed on the IPCS website for public comment. This will ultimately be published in the Environmental Health Criteria series, superseding EHC 70 (“Principles for the safety assessment of food additives and contaminants in food”) and EHC 104 (“Principles for the toxicological assessment of pesticide residues in food”) which, for the best part of two decades, have served as the basis for assessing the safety of chemicals in food.
