Oleic acid is a skin irritant in man and has produced eye irritation in the rabbit. It is of low acute toxicity, although high oral doses can impair the reproductive functions of female rats. Sodium oleate administered orally to rats for two years resulted in pancreatic tumours, but although other long-term studies have been performed, no clear picture of oleic acid’s carcinogenic potential has emerged. In rats and mice, oleic acid has shown some ability to increase the yield of tumours induced by known carcinogens. Oleic acid can induce chromosomal effects in cultured mammalian and yeast cells, but gave no evidence of mutagenicity in bacterial (Ames) and yeast assays. Oleic acid esters occur naturally in the diet and are hydrolysed to oleic acid which can enter normal metabolic pathways.
