An October 2015 meeting of the International Agency for Research on Cancer (IARC) discussed the carcinogenicity of the consumption of red and processed meat. After assessing over 800 epidemiological studies, IARC classified processed meat as “carcinogenic to humans” (Group 1) and red meats as “probably carcinogenic to humans” (Group 2A). These assessments are to be published in volume 114 of the IARC monographs.
